Vegetarian Moussaka

TIME/ Difficulty/Type

INGREDIENTS

  • 1 eggplant
  • 1 sweet potato
  • 2 Zucchini
  • 2 tomatoes
  • 1 carrot
  • 5 mushrooms
  • few thyme
  • nutmeg
  • 0.5 Onion
  • 3 slices garlic
  • 30g lentil
  • Salt
  • 65 g butter
  • 80 milk
  • 40g flour
  • 1 Bay leaf

Prep

  1. Sweet potato: Cook 10 mins each side
  2. Eggplant: cook 1.5 mins each side
  3. Zucchini: cook 3 mins each Side
  4. Mushroom: cook 3 mins
  5. lentil: Mix Lentil and water: 1:3 and put into pressure cooker and wait 20 times “beep”

 

Moussaka Sauce

  1. Stir fry garlic, onion, carrot for 10 mins
  2. Add tomato sauce and cooked lentil, few thyme for 20 mins

Bachemel Sauce

  1. Melt butter add flour
  2. Mix with milk and Bay leaf and cook for 5 mins

Layer

  1. Pour oil in the ground layer
  2. Put sweet potato in the 1st layer
  3. Put eggplant in the 2nd layer
  4. Put mushroom in the 3rd layer
  5. Put moussaka sauce in the 4th layer
  6. Put bachemel sauce in the 5th layer
  7. Put cucumber sauce in the 6th layer
  8. Put bachemel sauce in the 7th layer

Oven

  1. Pre-heat the oven with 450F
  2. Bake 1 hour until the surface is brown
